Pork Fajitas & Salsa Verde

A big thanks, again to my friend Sania. I used the tomatillos she gave me to make a delicious salsa verde! It was so fun to play with new foods and so much better than the canned stuff!


I served it along side some pork fajitas and watched my hubby devote everything! The kids were weenies and too creeped out to even try the salsa.
It gave me a great excuse to use my new recipe cards, too!

Verde Salsa

  • 2-3 cups tomatillos husked, washed and roughly chopped 
  • 2 limes juiced
  • 1 tsp Coarse garlic salt
  • 1 tsp sugar (or to taste)
  • 1 small chopped onion
  • 1/4 cup cilantro
Blend cilantro, tomatillos & onion infood processor, blender, etc.  Place in saucepan and add remaining ingredients. Cover and bring to simmer. Simmer 10 minutes. Set aside to cool or may refrigerate. Serve with tortilla chips or use on fajitas, tacos, etc. *My family LOVES cilantro so feel free to cut back if you like. It’s hard to estimate serving sizes as we nearly ate it all in one sitting.
